Hello foodie friends! How’s your weekend been? Hopefully it’s been a delicious & healthy one! Speaking of food – let’s take a peek at what I’ve been eating lately, shall we?! It’s been a long time since we’ve done a good ‘ol Peek at My Plate edition!
These are some of the goodies I’ve been eating last week when I was living on my own in Janesville (thank goodness that’s over!). In case you’re new to the blog, I tend to eat low-carb/high fat and usually ketogenic. This means I try to focus on getting my nutrients while avoiding grains and refined sugars.
Let’s take a peek…
Breakfast
Two free-range local eggs cooked in coconut oil, Applegate Naturals bacon, and coffee with a bit of organic heavy cream.
Lunch
Leftover Mexican Crockpot Chicken Thighs topped with sour cream, side of steamed broccoli & cauliflower.
Snacks
Olives, cheese curds, & an organic pepper jack cheese stick… mmm…
Dinner
Wild salmon fillet pan-fried in coconut oil, then topped with a mix of mayo & garlic, side of steamed broccoli & cauliflower topped with some organic pastured butter. Nom, nom.
Dessert
Homemade keto chocolate, aka chocolate fat bomb
Well, that’s what a pretty typical day of eating has been looking like for me lately. I’ve been feeling great with eating very low-carb… diminished cravings, no bloating, better digestion… you get the picture.
