Hello, friends!! Are you feeling ready for summer? I know I am!! When I think of summer I tend to think of delicious treats & sweet things, like fruit. Or- maybe some creamy, lemony little no-bake treats!
Is lemony even a real word? Probably not, but you get the point. These little treats are not only fluffy & creamy, but they’re sugar-free & packed with healthy fats. This makes them the perfect summer bite-sized treat for your low-carb, sugar-free, or keto diet… as well as gluten-free. Well, you get the idea – they’re awesome!
These treats are filled with only the best ingredients & are super easy to make & require no oven or special tools – only some small silicone molds (other things will probably work, I just find these really convenient).
- 8 oz (1 package) Organic cream cheese (regular, full fat version), softened
- 8 T Organic pastured butter, melted
- 1 T Lemon juice (no additives - 100% juice)
- 1 T MCT oil (or coconut oil)
- 8-10 drops Lemon flavored liquid stevia (can use regular unflavored & add more lemon juice)
- *Optional - garnish of unsweetened coconut flakes
- In a medium bowl, stir together all ingredients until well mixed.
- Evenly distribute mixture into 12 silicone muffin cups & garnish (if desired) with coconut flakes.
- Refrigerate uncovered for about an hour until they seem to firm up a bit, then store in a covered container in the fridge. Serve cold.
